Dressing a Deer, Huh?

Sure Charlie has strong opinions. But he's gutted more than his share of whitetails.


"If you want to hunt deer you gotta know how to dress it. Besides there just ain't that much to field dressing a deer. Basically all you're doing is removing the guts, saving any organ meat and prepping the carcass so the meat will cool down quickly. "

Is he wrong?

Ideally you want to start to gut your deer as soon as it hits the ground. The hotter it is out the more important this is.


Also don't forget to hang your field-dressed deer from a tree to cool it. If you leave it on it's side it will retain body heat.

Then too, it follows that the hotter it is the sooner you want to get it into a walk in cooler. Or over to your processing plant.

Naturally a sharp knife is a must.

Try to prop the deer up to make it easier to cut and keep it from rolling around.

Make your cut starting under the chin at the top of the throat to sever the trachea and esophagus. Carry that down all the way from there to the anus. Just make sure not to cut too deep and nick, or worse the intestines.

After removing the guts rinse out the cavity with water. And do what you can to keep the flies off it.

If it is warm you might pack the body cavity with ice.
