"You have to keep the lack of fat in mind when cooking it. If you cook it much past medium, it will be dry," Dave claims. "That's because there's very little marbling in wild game." Yet venison hold up nicely to herbs and spices like sage, rosemary or cilantro. So don't be afraid to use such spices liberally. For instance you could slather Dijon mustard and rosemary on a cut of steak. Then grill. Worried about it tasting gamy? Dave's got another tip for you. "Soak the cut in buttermilk. The milk will draw out any chemical that may lead to it tasting strong." Can't let you leave without at least mentioning his favorite way to prep venison. Grilled shish kebabs.
